制作指导
莴笋购买后,一次将几棵竖直放入盛有凉水的器皿内,水淹至莴笋主干1/3处,放置在室内阴凉处3~5天,叶子仍呈绿色,莴笋主干仍很新鲜,削皮后炒吃仍鲜嫩可口。
莴笋下锅前挤干水分可增加脆嫩感。但从营养角度考虑,不应挤干水分,因为这会丧失大量的水溶性维生素。
莴笋怕咸,盐要少放才好吃。
