基围虾......100克
玉米......半根
料酒......1匙
葱花、姜末......各适量
植物油......适量
白胡椒粉、盐......各少许

①用刀切下玉米粒备用,虾挑去虾线并剥壳,留下虾头和虾壳备用。取出虾仁,加料酒、盐、白胡椒粉、姜末拌匀,腌15分钟。

②锅里倒植物油,油锅烧热,放入虾头和虾壳,熬至油变红、虾壳变酥。虾油熬好备用。

③大米洗净后放入砂锅,加入适量清水煮至粥黏稠;放入玉米粒与虾仁,搅拌均匀。

④粥出锅前,淋少许虾油,加盐调味,撒上葱花即可。
