上浆
上浆就是在经过刀工处理的食材上挂上一层薄浆,使菜肴达到滑嫩的一种技术措施。通过上浆食材可以保持嫩度,美化形态,保持和增加菜肴的营养成分,还可以保留菜肴的鲜美滋味。依上浆用料组配形式的不同,可把浆分成如下几种。
1. 鸡蛋清粉浆的处理
①食材洗净、搌干,放入碗中。

②加入适量的鸡蛋清。

③再放入少许淀粉。

④充分抓拌均匀即可。

2. 水粉浆的处理
①将淀粉和适量清水放入碗中调成水粉浆。

②再将食材(鸡肉)洗净,切成细丝,放入小碗中。

③加入适量的水粉浆拌匀上浆即可。

3. 全蛋粉浆的处理
食材(里脊片)洗净,放入碗中,磕入整个鸡蛋。

先用手(或筷子)轻轻抓拌均匀。

再放入适量的淀粉搅匀。

然后加入少许植物油拌匀即可。
